Whoopie Pies

I love fall!  I am so happy that Labor Day has arrived and I decided whoopie pies were the perfect way to celebrate the holiday weekend.  Having never made them before I hit up the experts at Gourmet for a recipe.  I didn’t make any adjustments this time aside from adding a tablespoon of espresso powder to enhance the chocolate flavor.  And did it ever deliver!  The cake was moist and the filling was gooey and sweet.  The espresso powder added a richness that was perfect.

This will definitely be my base recipe for whoopie pies in the future.  It was so incredibly easy and there are endless possibilities for changing it up!

Ingredients:

For the Cake:

  • 2 cups all purpose flour
  • 1/2 cups cocoa powder
  • 1 tablespoon espresso powder
  • 1 1/4 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup well-shaken buttermilk
  • 1 teaspoon vanilla
  • 4 ounces unsalted butter, room temperature
  • 1 cup packed brown sugar
  • 1 large egg

For the Filling:

  • 4 ounces unsalted butter, room temperature
  • 1 1/4 cups confectioners sugar
  • 1 cup Marshmallow Fluff
  • 1 teaspoon vanilla

Method:

Make the cakes:

  1. Preheat the oven to 350.
  2. Whisk together the flour, cocoa, espresso powder, baking soda, and salt in a bowl until combined.  Stir together buttermilk and vanilla in a separate bowl.
  3. Beat together softened butter and brown sugar in an electric mixer and medium-high speed until pale and fluffy, 3-5 minutes.  Add egg, beating until well combined.  Scrape down sides of the bowl.  Reduce speed to low and alternately add flour mixture and buttermilk, beginning and ending with flour.  Scrape down sides occasionally and mix until just smooth.
  4. Using a cookie scoop (any size you prefer), scoop out mounds of batter 2 inches apart onto 2 large baking sheets that are either buttered or layered with parchment.  Bake in the upper and lower thirds of the oven, rotating the sheets halfway through, until the tops are puffed and caked spring back when touched, 11-13 minutes.  Transfer to a cooling rack and allow to cool completely.

Make the filling:

  1. Beat together butter, confectioners sugar, marshmallow and vanilla at medium speed until smooth, 3 minutes.
  2. Set aside.

Assemble whoopie pies:

  1. Spread filling evenly on flat sides of half the cakes and top with the remaining cakes!
  2. Gourmet claims that these are better the second day.  So… try not to eat them all at once.

    • I’m definitely in a baking mood. I think whole wheat apple muffins are on the menu for tonight. I keep sending baked goods into work with Jeff so we don’t eat everything. Hopefully his coworkers are happy and not groaning as more buttery goodness enters the building.

    • I kept seeing them in the grocery store and craving them. They look like gigantic Oreos, which are my favorite non-homemade cookies. Minimal effort, totally worth it.

  12. These look adorable, I made some once that were chocolate peanut butter with sprinkles. They were cute, but I think I needed one of those pans to make them look perfectly rounded and symetrical

    • You don’t need a special pan, just use a cookie scoop! They’ll all come out uniform and round. I dunk the scoop in hot water periodically so the batter slides off easily.

  15. This is a perfect recipe. My fiance is obsessed with whoopie pies, and every time he visits Lancaster, PA (which is near where my family is from) he stocks up at the PA Dutch markets! I’ve seen recipes for red velvet, pumpkin, peanut butter, etc., but haven’t been able to track down a traditional recipe until now. Thanks for sharing!

  20. Thanks for stopping by our site. We’ve checked out your blog and the recipes look great and the photos beautiful. I have to admit…the first thing we’ll attempt to make off your blog are the whoopie pies. We only recently became acquainted with the whoopie pie over Labor Day weekend (coincidentally). We were visiting Maine where the whoopie pie is virtually a religion. We had the best (albeit our only) whoopie pies at our B&B and have been reluctant to take a stab at it. Now we have the recipe to do it!
