Almond Butter

Since I now regularly make raw almond milk, I decided to invest in bulk almonds to save money.  Totally worth it! I can now make milk for pennies on the dollar. It got me wondering what else I could do with them, and I decided to try homemade almond butter.  It’s unbelievably easy and incredibly economical.

This almond butter is a bit grainier than what you’d get at the store, but I like the texture.  You can strain it through a fine mesh strainer if you prefer it to be more like store brands.  The longer you puree, the smoother the butter will be.  It should keep in the fridge for several months.  You can also make this with just the nuts and salt.  The vegetable oil makes the almond butter more spreadable but it’s not essential.  You will have to run the food processor for longer, but the oil from the almonds will eventually come through as the machine heats up.

Ingredients:

  • 1 cup raw almonds
  • 1/4 teaspoon salt
  • optional: 1-2 tablespoons vegetable oil (any neutral flavored oil is fine)

Method:

  1. Preheat the oven to 350 degrees F.  Roast the almonds until fragrant.  This can take anywhere from 5-10 minutes, depending on your oven.  You’ll know they’re ready when they smell amazing and are just slightly darker in color.  Allow them to cool.
  2. Pulse the almonds with the salt in a food processor until they’re finely chopped.
  3. Slowly add the oil while the machine is on, and continue to puree until smooth.  This will take several minutes.  Scrape down the sides periodically.
  4. The food processor will heat up the almond butter, so it may need to chill before it’s a spreadable consistency.

    • Yes, and anywhere else one might use nut butter. I really like it in smoothies with bananas and almond milk.

    Have you ever tried macadamia butter? A touch of sugar, a pinch of salt, and it’s outta this world! :)

    • You can use it anywhere you’d use peanut butter. A sandwich, on apple or celery slices, in smoothies or sauces…

    • Around here they’re $3 a lb at BJ’s. I don’t have a membership but a friend grabbed me some.

      • Trader Joes has great prices on Almonds, and Costo too. Hopefully you have a TJ’s in the area, Sam’s Club also has them if you’re a member there.

        • I used to get them at Trader Joe’s but since my boss has a membership to BJ’s Wholesale I had her get me several lbs last time she went. $3 a pound!

    Nuts are pricey here, but my parents recently came for a visit, and their Costco Membership afforded me a few pounds of walnuts and almonds to play with :)

  36. I love almond butter on sliced apples. The best! I’ve tried making almond butter at home before and it didn’t come out very well however I didn’t roast the almond before doing everything else. Maybe that’s why. I will definitely try it again. Do you have to use a food processor or can you use a high powered blender?

    • You can use a sturdy blender, it’s just a bit harder to scrape everything out.

  40. Do you think I could use this recipe with walnuts to make walnut butter? I’ve got a bunch of walnuts lying around and I don’t like eating them plain…not that there’s not 83746557392048547 other things you can do with walnuts, but I’ve been wondering about making nut butters at home!

    • Definitely! I think you can use any nut. I’m going to try cashew butter next.

  43. It’s funny; i’ve seen tons of homemade peanut butter recipes, and yet i’ve never thought of making homemade almond butter! it looks delicious. I’ll have to give it a go.

  47. The first image looks gorgeous! Have you tried peeling the almonds? Peeled you can roast them even darker in the oven which also develops chocolate like aromas. Adding the roasted ground almonds to toffee caramel is also a nice combination – you might even use the dry leftovers from the almond milk making for that purpose.

  50. HI, amazing site full of fresh, delicous recipes! I used to make my own paste with various nuts too. I was surprised how easy it was. I grind nuts to make nut flour, too. It’s very economical, you’re absolutely right!

  52. Add me to the folks in awe of the dripping almond butter action shot! I make my own almond butter too, but just with raw almonds. It’s thicker than yours and wouldn’t run off a spoon like that. While I like the way mine turns out fine, I will have to try it with toasted almonds sometime just to see if it’s different. I’ve been imitating the raw almond butter from Trader Joe’s, so I just went with one ingredient, the raw almonds. I use a Vitamix. It works fine for blending up almond butter.

    • I purposefully thinned it our a bit for the shot. The almond butter I typically make it much thicker like the TJ brands. I’ve made it with raw almonds as well and both ways are good.
